Job Description Job Description Job Summary: The Banquet &
Concessions Kitchen Supervisor is responsible for supervising daily
culinary operations supporting banquet events, high?volume
concessions, and special functions. This role ensures all food
production is executed to WEC culinary standards, delivered on
time, and aligned with event requirements. The supervisor oversees
production cooks, coordinates prep and execution schedules,
monitors food safety, and supports the Banquet Chef with staff
training, quality control, efficiency, and organization. This
position plays a key role in delivering a high?quality culinary
experience for large?scale events. Primary Responsibilities:
Supervise daily kitchen operations for banquets and concessions,
ensuring timelines and event requirements are met. Lead, train, and
support culinary team members assigned to banquet and concessions
production. Review Banquet Event Orders (BEOs) and concession menus
to plan production, allocate labor, and organize workflow. Oversee
prep production, hot line execution, plating, and packaging of
large?volume items. Maintain WEC culinary quality standards,
presentation guidelines, and portion consistency. Ensure all food
is prepared in compliance with food safety, sanitation, and HACCP
guidelines. Coordinate with the Banquet Chef, Executive Chef, and
culinary leadership to forecast product needs and control waste.
Monitor inventory levels, requisition product, and report shortages
or equipment issues. Support on?site event execution, including
buffet setup, hot box staging, and concession line readiness.
Assist with coaching, mentoring, and developing cooks at all skill
levels. Maintain a clean, organized, and efficient kitchen
environment. Communicate effectively with culinary leadership,
stewards, banquet managers, and event staff. Ensure all closing
procedures, storage standards, and labeling requirements are
followed. Perform additional job-related duties as assigned by the
Banquet Chef or Executive Chef. This job description in no way

Must be able to stand and/or walk for up to 8–10 hours. Requires

to talk, hear, and have strong visual acuity for production tasks
Qualifications, Education, Experience, Skills and Abilities High
school diploma or equivalent required; culinary degree preferred.
Minimum 2 years of culinary experience in banquets, hotels,
resorts, catering, or high?volume operations. 1 year of supervisory
or lead cook experience strongly preferred. Strong leadership,
communication, and organizational abilities. Ability to execute and
guide a team in high?volume production environments. Knowledge of
food safety, sanitation, and proper kitchen procedures. Ability to
work under pressure while maintaining quality and accuracy.
Flexibility to work evenings, weekends, holidays, and large event
days. Familiarity with kitchen equipment, banquet production
systems, and basic computer skills. The World Equestrian Center is
